Kitchen knife Paring 100mm from Suncraft Elegancia is made of more modern SG2 steel. It is Japanese powder steel that is also produced by the company Takefu Special Steel Co., same as VG-10 steel. This product_type of steel was prepared as new and more efficient steel than VG-10. SG2 steel alloy contains 30% more carbon than VG-10, which determines the hardness of the steel, 230% more molybdenum, which contributes to corrosion treatment, and 570% more vanadium, which contributes to long-term retention of sharpness. The SG2 steel blade is hardened with at least 62 units in the Rockwell scale. Which is significantly higher than in the case of AUS-10 and VG-10 steel, which means that the cut, but most importantly, retention of sharpness will remain excellent.
